SALADE NICOISE WITH BROILED TUNA
This classic salad features line-caught tuna, fresh potatoes, green beans, and tomatoes. We love it as an entree for two or as a cheerful side the whole family can enjoy. It also travels well making it ideal for picnics at the park or on the beach.
makes 2 servings ready in 20-30 minutes
1 Tray PureFish Tuna (or substitute Albacore)
1 pound fingerling potatoes, cut in half
1 pound green beans, stem ends removed
1 cup cherry tomatoes, cut in half
½ cup nicoise olives, pitted and roughly chopped
1 red onion, thinly sliced
3 tablespoons red wine vinegar
FOR THE TAPENADE:
1 cup pitted castelvetrano olives, roughly chopped
3 tablespoons flat leaf parsley, finely chopped
1 clove garlic, finely chopped
½ teaspoon chili flakes
½ cup extra virgin olive oil
1 tablespoon red wine vinegar
½ teaspoon salt
Step 1 Transfer PureFish Perfect Portion Tray from the freezer to the refrigerator 12-24 hours before cooking to gently thaw the fish. Always keep raw fish refrigerated, and for best texture and taste cook within 4 days of thawing.
Step 2 Remove the tray from the refrigerator, peel back the protective film and discard. Preheat broiler and position the oven rack 6 inches from the flame.
* Since we will be broiling on high heat (any temperature above 375º F), remove pad under fish.
Step 3 Prepare the onions. Rinse in two changes of water, pat dry, and place in a small bowl or jar. Pour vinegar over them and leave to sit for 20 minutes while you prepare everything else.
Step 4 Set the potatoes into a small stock pot and fill with water to cover by 1 inch. Place over high heat and bring to a boil. Reduce heat to medium and simmer potatoes until they are fork tender. Strain potatoes and set aside.
Step 5 While the potatoes cook, steam the green beans. Season halved tomatoes with salt and pepper, and set aside along with the prepped nicoise olives. Make the tapenade by mixing ingredients together until well combined.
Step 6 Remove the PureFish Oven Ready Tray from the refrigerator, peel back the protective film and discard. Preheat broiler and position the oven rack 6 inches from the flame. Brush tuna with olive oil, season with salt and fresh cracked pepper.
Broil for 9 minutes. Fish should be light
